Strawberry Cream Tequila Rose Traybake

Perfect served with a tipple of Strawberry Cream Tequila Rose.

This bake consists of a light and airy traybake flavoured with Strawberry Cream Tequila Rose marbled with pink. Then topped with a buttercream infused with the tequila rose and topped with diced pieces of strawberry and then dusted with icing sugar.

If strawberries aren’t in season when you make this then just swap the fresh diced strawberries for some freeze dried ones

I hadn’t tried tequila rose before this only in a cocktail that I had made prior to this and I thought that the creamy strawberry flavoured alcohol would make a great cake.

For the cake:
• 225g unsalted butter, softened
• 225g caster sugar
• 4 eggs
• 3tbsp tequila rose
• 300g self-raising flour, sifted
• 2tsp baking powder
• Pink food colouring

For the buttercream:
• 100g unsalted butter
• 215g icing sugar, sifted
• 1 ½ tbsp tequila rose
• Pink food colouring

For the decoration:
• Strawberries (diced)
• Icing sugar, for dusting

For the cake:
1. Preheat the oven to 180°C and line a nine-inch baking tray.
2. Beat the butter and sugar together until light and fluffy.
3. Gradually add the eggs to the mixture with a spoonful of flour.
4. Then beat in the tequila rose.
5. Fold in the flour and the baking powder.
6. Then place half the mixture in a separate bowl and add the pink food colouring to it.
7. Then add a spoonful of the white mixture followed by a spoonful of the pink batter and repeat this until its all in the tin.
8. Use a skewer to marble this together.
9. Bake for 30-35 minutes.
10. Once baked remove from the oven and allow to cool in the tin for 15-20 minutes.
11. Then remove from the tin and transfer to a wire rack to allow to cool completely.

For the buttercream:
1. Beat the butter and gradually add the icing sugar.
2. Once all the icing sugar is incorporated add the tequila rose.
3. Take half the buttercream and add pink food colouring to it.

To assemble:
1. Marble the buttercream together on top of the cake.
2. Scatter the strawberries all over and then dust the icing sugar over.
3. Cut in to 9 squares and serve.

      Hi, thanks for the comment as for where you can purchase the small bottles I’m not too sure as I recieved them as a gift. I do know that you can buy Tequila Rose in Sainsbury’s so maybe try there?
